Campfire Mac and Cheese

Ingredients
- 2 cups elbow macaroni pasta
- 1 cup whole milk
- 1/4 cup butter
- 1, 1 oz packet of ranch seasoning
- 3 cloves garlic
- 1 cup grated Colby jack cheese
- 1 cup grated cheddar jack cheese
- 3/4 cup sour cream
- 1/2 cup panko bread crumbs
- 2 tbsp unsalted butter
- 1/2 cup grated parmesan
- Cooking Spray
Instructions
- Put a pot to boil and cook the macaroni pasta according to package instructions. Strain and rinse with cold water.
- In a deep pot or dutch oven combine the milk, butter, ranch seasoning, and garlic. Cook on medium until heated through.
- Once heated mix in the Colby and cheddar jack cheese. once melted add the sour cream.
- Stir in macaroni.
- In a separate bowl combine panko bread crumbs and 2 tbsp of butter. Mix until uniform
- CAMPING: Spray 6 mini aluminum pie tins with cooking spray, fill with macaroni, top with shredded parmesan and the breadcrumb mixture. To cover spray the underside of the foil with cooking spray. To cook - place a few inches above hot coals on a cooking grate or rack. Heat for about 10 minutes and enjoy!
- HOME/OVEN: Bake at 350 for 20-25 minutes. You can use a big baking dish or the mini pie tins, you don’t need to cover with foil before baking. Top should be golden brown and toasty!
