Apple Hand Pies

Ingredients
- 3 granny smith apples
- 1/3 cup of sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/4 tsp ground cardamom
- 2 tbsp unsalted butter
- 1 egg
- 2 sheets frozen or homemade pie dough
- (optional) coarse sugar for sprinkling
Instructions
- Peel and cut the apples, set aside.
- Add butter to a pot on medium-low heat, melt, and slightly toast until fragrant and browned.
- Add in peeled and chopped apples, sugar, cinnamon, nutmeg, allspice, and cardamom. Stir to incorporate everything and cook for about 4 minutes.
- Remove apple pie filling from the heat and let cool for 20 minutes.
- Roll your pie dough until it is about a quarter inch thick (or about a half centimeter thick) and assemble your hand pies. I like to use the edges of a fork to crimp the edges, you can also use your fingers.
- Place on a parchment lined baking sheet
- Paint the pies with a beaten egg and sprinkle with coarse sugar if desired. Cut slits on the pies so they can vent.
- Bake at 375 °F (~190 °C) for 30 minutes
- Let cool on a baking rack if you have one, and enjoy!
