Creamy Spinach and Artichoke Chicken
Ingredients
- 2 tbsp olive oil
- 1 lb chicken
- 1 tsp powdered oregano
- 2 tsp powdered paprika
- 3 tbsp butter
- 1 onion, chopped
- 12 oz can of artichokes, drained
- 4 garlic cloves, minced
- 1/4 cup white wine or chicken stock
- 1/2 cup heavy cream
- 2 tbsp dijon mustard
- 1/2 cup grated parmesan cheese
- 2 cups frozen or fresh spinach
- salt and pepper to taste
Instructions
- Rub chicken with salt, pepper, a bit of oregano, and paprika. Heat olive oil in a pan and sear chicken on both sides. Remove the chicken from the pan and set aside.
- Add butter, onion, and artichokes to the pan. Cooking until onions are translucent. Add in garlic and cook until fragrant.
- Deglaze the pan with the wine, mix in the cream, mustard, Parmesan cheese and spinach.
- Add chicken to the skillet and simmer for 10 minutes.
- Serve and enjoy
