Campfire Potatoes

Ingredients
- 1 cup chopped potatoes
- 1 onion chopped
- 5 garlic cloves, minced
- salt + pepper
- 3 tbsp butter or oil
- 1/3 cup shredded cheddar cheese
Instructions
- Place a 2 foot long piece of aluminum foil on a flat surface.
- Place half of potatoes and onion on the foil. Top with cubed butter, salt and pepper.
- Leave a frame around the potatoes so you can fold up the foil packet once done.
- Then place the rest of potatoes and onions on top. fold it over and seal it. you can double wrap if if you’re concerned about it breaking open.
- Cook over hot coals, on a grill or grate. Turn every 10 minutes, cooking for a total of 40 minutes.
