Breakfast Hash
This is such an easy and filling breakfast. I love making this on Sunday's because you kind of just throw everything into the oven and then have an amazing breakfast ready to enjoy! This breakfast hash has potatoes, cherry tomatoes, onion, garlic and spinach. Its so delicious and simple, the baked eggs come out perfectly to your liking depending on how long you cook them for.
There is no easier way to cook an egg than in this breakfast hash, any fan of potatoes is sure to love this breakfast. I love enjoying this dish with hot sauce, it truly is the finishing touch. My favorite is Cholula but feel free to use whichever one you have or love. Pesto could also go good on these eggs, so let me know what you end up trying them with.

Ingredients
- 4 cups chopped potatoes
- 1/2 cup of halved cherry tomatoes
- 1 onion chopped
- 5 cloves of garlic, minced
- salt + pepper to taste
- 1/2 tsp oregano
- 2-3 handfuls of fresh spinach
- 3-4 eggs
- (optional) Hot sauce for serving - Cholula is my favorite
Instructions
- Start by lining your baking dish with parchment paper, I like to cut mine to size so it fits inside the dish perfectly.
- Into your baking dish add the potatoes, cherry tomatoes, onion, garlic, salt, pepper, and oregano.
- Bake at 450 F for half an hour, then remove from the oven add in 2-3 handfuls of fresh spinach and mix up. Place back into the oven and bake for 5 minutes.
- Remove dish from the oven and create 3-4 little gaps in the hash for the eggs. Crack the eggs into the spaces you created and bake for 15-20 minutes. For runnier eggs i suggest closer to 15 minutes and for harder eggs, go for 20 minutes.
