Bacon, Egg, and Cheese Breakfast Pastries
If you’re looking for an easy, scrumptious, and photo worthy breakfast this is the one! These little breakfast pastries are quick and simple. I love how there is virtually no cleanup since it’s all done on a baking tray lined with parchment. The only thing you really need to clean is the pan you use to fry the bacon used in the pastries!
What makes this recipe so simple is the use of store bought puff pastry! Pictured above is the one I like to use. It comes with two sheets of puff pastry and for this recipe we only use one sheet.
I cut it into thirds long way, following the fold lines of the pastry. Then I cut straight across, so in half. That leaves me with 6 rectangles.
Cutting a little frame around them is what allows us to be able to easily fill the pastry with egg, cheese and bacon. Don’t cut all the way down! Simply score the pastry, by lightly cutting into it, about halfway down. I then take a fork and tap it into the inside of the frames we scored. This makes it so it doesn’t puff up as much and it’s easier to push down later after we bake them.
After a quick bake we take the pastry out of the oven and gently push down the inside of the frames we scored. This creates the perfectly little well for filling. These pastries are so crispy and delicious, enjoy!

Ingredients
- 1 box of puff pastry sheets, we only use one sheet
- 6 eggs
- 3-4 pieces of thick cut bacon
- 1/2 cup grated cheddar cheese
- Salt, to taste
- (Optional: green onions or fresh parsley for topping)
Instructions
- Star by unrolling the puff pastry and cutting into 6 pieces. I like to cut perpendicularly along the fold lines and then cut those pieces in half horizontally.
- Next we are going to score a frame or border along the inside of each pastry. Be sure to not cut all the way down and only gently cut into the pastry about halfway.
- Now with a fork we are going to poke the center of the frames we made with a fork. This makes it not puff up as much when baking.
- Bake at 360 F for 12 minutes.
- Remove from the oven and push down the inside of the frames we scored. Be sure to do this gently, I like to use a fork for this.
- Fill the wells with egg, cheese and bacon. I like to put the egg in first so it doesn’t spill out. Lightly salt.
- Bake again at 360 F for 12 minutes.
- It’s that easy, enjoy with green onions or fresh parsley!
