Gingerbread Waffles
If you’re looking for a cozy and sweet breakfast recipe for this holiday season this is my favorite one! These gingerbread waffles are quick, easy and a crowd favorite. My family always asks me to make these and they leave the house smelling like cozy warm spices. Top with your favorite toppings - maple syrup, chocolate chips, butter, whipped cream, or what ever your heart desires.
This recipe makes 5 mini waffles so feel free to double it if you plan to make more! No mixer needed, just a whisk or a fork. The secret to that beautiful brown gingerbread color is molasses, these taste just like a gingerbread cookie turned into a waffle.
I love bringing my gingerbread mini waffle maker out of storage along with my holiday decor, I got it at Target a few years back and it still works great! I may have a small collection of mini waffle makers consisting of a heart shaped one as well. They have a super useful indicator light on them that lets you know when your waffle is ready to be served. I just make sure to brush a bit of butter onto the waffle maker before every use and have never had any issues with sticking.
I’m kind of convinced that smaller things may taste better, why have normal waffles when you can make them mini waffles! You can also make these and freeze them in a freezer zip-loc bag and then toast or microwave when ready to eat - for a festive holiday breakfast without the daily fuss!
Gingerbread is my all time favorite holiday flavor, I love the smell and taste! Crispy ginger snaps, and soft baked gingerbread alike. If you’re as much of a fan of gingerbread as I am then i’m sure you’ll love these waffles! These are delicious with a peppermint mocha latte or some hot chocolate!

Ingredients
- 1/4 cup unsalted butter (melted)
- 1/2 cup whole milk
- 1 egg
- 1/4 tsp vanilla extract
- 4 TBSP molasses
- 1/2 tsp cinnamon
- 1 tsp ground ginger
- 1/4 tsp nutmeg
- 1 cup flour
- pinch of salt
- 1 TBSP brown sugar
- 2 tsp baking powder
- 2 TBSP white sugar
- maple syrup for serving
Instructions
- In a bowl mix melted butter, milk, egg, vanilla, molasses, cinnamon, ground ginger, and nutmeg.
- In a separate bowl mix flour, salt, brown sugar, baking powder, and white sugar.
- Mix flour mixture into butter and milk mixture, combine until uniform but still lumpy.
- Butter waffle iron before use and remove once the indicator light says so.
- Serve with warm maple syrup and enjoy!
