Strawberry Muffins
Blueberry muffins are amazing, so why not strawberry muffins too! These fluffy muffins are super easy to make and great for strawberry lovers. The streusel topping gives them a bakery style taste and truly is a must in my opinion.
I use fresh strawberries, but i’m sure frozen ones would work just as well if thawed out! You can cut the strawberry chunks up to whatever size you like. I went with small chunks as I was afraid all the strawberries would sink to the bottom.
Don’t forget to take out your butter and eggs ahead of time, as this recipe does require you cream the butter and sugar. Also set aside some of your chopped strawberries
You can go with store bought cupcake liners, make your own, or even go without them. If you do decide not to use any liners be sure to oil your pan so the muffins don’t get stuck! These muffins would be amazing for a springtime brunch or picnic.

Ingredients
- 2 cups chopped strawberries
- 1/2 cup unsalted butter, softened
- 3/4 cup white sugar
- 2 eggs, room temperature
- 3/4 tsp vanilla extract
- 2 cups flour
- 1/4 tsp salt
- 2 tsp baking powder
- 1/2 cup milk
Streusel topping:
- 4 tbsp butter, melted
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup flour
Instructions
- The streusel topping: mix melted butter, brown sugar, cinnamon, and flour in a bowl until crumbly. You can use a fork or a whisk. Set aside or store in the fridge until ready to use later.
- Cream room temperature butter and white sugar. you can use a mixer or cream it by hand
- Mix in the eggs along with vanilla extract.
- In a separate bowl mix flour, salt, and baking powder. Then slowly combine while mixing with the butter and sugar mixture.
- Slowly pour in milk while mixing, stop when its combined. be careful not to over-mix.
- Fold in the washed and chopped strawberries, save a bit for the top.
- Scoop batter into a muffin tin with liners or a greased muffin tin, top with some of the strawberries we seta side and the streusel topping.
- Bake at 375 for 15-20 minutes.
