Veggie Pot Pie
This veggie pot pie is so savory and delicious you’ll forget about the ones with meat in them. Mushrooms, leeks, and cherry tomatoes taste amazing together. I love how juicy mushrooms are and the flavor of cherry tomatoes. Leeks can be substituted for an onion if needed, but if you can find them they make this pot pie extra special.
Celery is a must in any pot pie, so it wasn’t forgotten about here. I love how the flavors work so well together. Stir frying the veggies makes everything taste delicious.
The filling for this pie is made on the stove, once it’s done the pie is ready to be filled and popped into the oven. I like using store bought pie dough to make this pie quicker, especially if its a weeknight. One box of pie dough is enough, with one disc of dough for the bottom and the other for the top.
Feel free to keep it simple or have some fun with the top of the pie. I did a lattice design for this one, it’s pretty easy and looks so cute. Bake until the pie crust is nice and browned, my pie is usually bubbling once I pull it out of the oven. Be sure to let it cool before digging in, it may look amazing but it can be incredibly hot! Leftovers are best when reheated in the oven.

Ingredients
- 4 tbsp butter
- 3 leeks, washed and sliced
- 2 celery stalks, chopped
- 1/2 cup cherry tomatoes, halved
- 32 oz brown baby Bella mushrooms, chopped
- salt + pepper
- 1 tsp dried oregano
- 1 tsp paprika
- 4 cloves of garlic, minced
- 1 tsp dried thyme
- 3 tbsp flour
- Pie dough, for top and bottom of pie
- egg, for egg wash
Instructions
- In a deep bottom pot start by stir frying the sliced leeks in butter. Once the leeks have softened a bit add in the celery, cherry tomatoes, and mushrooms.
- Add in the salt, pepper, oregano, paprika, garlic, and thyme. Cooking the veggies down, the mushrooms should be softer and the leeks as well. I usually cook everything for about 10 minutes.
- Mix in the flour, cooking for another 2 minutes until it is well incorporated.
- Pour filling into a pie dish that has already been lined with pie dough on the bottom. Top with your pie dough. Feel free to keep it simple or have fun.
- Paint the pie dough with a beaten egg.
